Soft Frosted Eggnog Cookies


In keeping with the Christmas goodies posts, I want to share this delicious eggnog cookie recipe from Life Made Sweeter with you guys. I couldn't resist, honestly. I mean, look how good they look!
Ahhh, I can't wait to live off them all season long. 

Ingredients
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon,
1/4 tsp ground nutmeg
1/8 teaspoon salt
1/3 cup unsalted butter, at room temperature
1/4 cup granulated sugar
1/4 cup light brown sugar, packed
1 large egg yolk, room temperature
1 teaspoon vanilla extract
1/4 cup eggnog

Eggnog Frosting
1/4 cup butter, softened
2 cups powdered sugar
2-3 tablespoons eggnog
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Instructions
  1. Line baking sheet with parchment paper or silicone mat.
  2. Using a hand mixer or a stand mixer, cream butter and sugar together for about 3 minutes, until light and fluffy. Beat in vanilla, eggnog, and the egg yolk until combined.
  3. Whisk together the flour, baking powder, cinnamon, nutmeg and salt in a medium bowl. Slowly mix in with the wet ingredients until just combined.
  4. Scoop out 1 1/2 tablespoons of dough and roll into balls, placing them onto a plate. Chill in the fridge for at least 30 minutes covered with plastic wrap.
  5. Once chilled, preheat oven to 350 F and bake for 10 to 12 minutes.

  6. To make the frosting:
  7. Using a stand mixer or a hand mixer, cream butter for about 3 minutes, until light and fluffy. Slowly add powdered sugar, nutmeg and cinnamon and beat until combined. Add eggnog, one tablespoon at a time until desired consistency or flavor is reached. Beat for an addition two minutes smooth. Frost cooled cookies and add sprinkles if desired.
